This Masterclass explores the world of traditional Alpine cheesemaking by comparing three incredible cheeses: Gruyère Alpage, 24-Month Comté, and Beaufort Alpage, and some of their mates. Each of these cheeses hails from high-altitude pastures, crafted using age-old techniques that have been perfected over centuries. While they share similarities in production methods, including raw milk, copper vats, and mountain affinage, their flavours diverge dramatically.

Our goal is to uncover the nuances that make each of these cheeses unique. Is it the influence of terroir? The specific breeds of cows? The slight variations in aging and salting? This tasting promises to be a fascinating journey into the heart of Alpine cheese traditions, highlighting how small differences in technique and environment can yield vastly different flavours and textures.
